Creates a finite element space for the coordinates

## Input Parameters

- ***DM        -*** The `DMPLEX`
- ***degree    -*** The degree of the finite element or `PETSC_DECIDE`
- ***coordFunc -*** An optional function to map new points from refinement to the surface
